Eggs are staple in majority of the diets. They are easy to make, rich in protein and vary fulfilling. If you’re running short on time, here are 3 egg recipes that you can prepare in just 10 minutes.
1) Summer scrambled eggs
Ingredients:
- 3 eggs
- 1 tomato
- 1 1/2 tsp basil
- 1 1/2 tsp cayenne pepper
- 1 1/2 tsp olive oil
Instructions :
- Beat eggs and hot pepper flakes together in a bowl.
- Chop the tomato and basil leaves into egg mixture. Heat olive oil in a nonstick skillet over high heat until oil starts to shimmer.
- Pour egg mixture into hot oil and cook, without stirring, for 5 seconds. Cook and stir egg mixture until eggs are scrambled and softly set, about 30 seconds.
- Transfer eggs to a plate and sprinkle with sea salt.

2)Vegetable eggs
Ingredients:
- 3 eggs
- 1 1/2 tbsp onions
- 3/4 tomatoes
- 1 1/2 peppers
- 1 1/2 tbsp coconut butter
Instructions :
- Melt coconut butter in a skillet over medium heat. Saute onions until translucent.
- Pour in eggs. Cook, stirring occasionally to scramble.
- When eggs appear almost done, stir in chopped tomatoes and peppers and season with salt and pepper.
3) Baby spinach omelette
Ingredients :
- 3 eggs
- 100 g baby spinach
- 2 tbsp parmesan cheese
- 1/2 tbsp onion powder
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions :
- In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese.
- Season with onion powder, nutmeg, salt, and pepper. In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set.
- Flip with a spatula and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or until desired.
